Nutritionist for Long COVID, ME/CFS & Postviral Recovery

Dr. Courtney Craig, ME/CFS nutritionist and chronic illness expert

My Journey with ME/CFS

I was first diagnosed with myalgic encephalomyelitis/chronic fatigue syndrome (ME/CFS) at age 16—a moment that completely changed the course of my life. For years, I was driven by a relentless need to understand this condition and regain my health.

What followed were decades of trial and error, scientific study, and multidisciplinary learning. Over time, I discovered strategies—especially through nutrition—that helped reduce my symptoms and allowed me to reclaim parts of my life that once felt out of reach.

Knowledge became my most powerful tool. Today, it continues to guide how I support others living with ME/CFS, long-haul COVID / Post-Acute Sequelae of COVID (PASC), and other complex postviral conditions.

Supporting Long COVID and Postviral Recovery Through Nutrition

While my personal journey began with ME/CFS, I now work with many individuals navigating long COVID / PASC, postviral fatigue, and related syndromes. These conditions share important biological overlaps — including:

  • Mitochondrial dysfunction and impaired energy metabolism

  • Chronic inflammation and oxidative stress

  • Gut dysbiosis and impaired barrier integrity

  • Immune dysregulation, including mast cell overactivation

Recent groundbreaking studies are beginning to reveal how these complex systems connect. Researchers are uncovering new mechanisms that help explain the profound energy failure and multi-system symptoms seen in ME/CFS, long COVID/PASC, and related conditions.

While this science is still developing, these discoveries are reshaping our understanding of postviral syndromes and bringing hope that targeted, effective treatments will become possible in the future.

My nutrition strategies are designed to address these underlying mechanisms, helping clients:

  • Lower inflammation and oxidative stress

  • Rebuild gut barrier integrity and microbiome balance

  • Support mitochondrial function and energy resilience

  • Calm mast cell and immune system overactivity

These are not quick fixes or trendy protocols—they’re evidence-based, personalized approaches rooted in both clinical experience and the latest research in postviral illness and aging science.

Why I Work with ME/CFS and Long COVID Patients

As a clinician living with ME/CFS, I deeply understand what it means to be dismissed or misunderstood. I also appreciate the daily burden of symptoms like fatigue, brain fog, gut dysfunction, and post-exertional crashes.

My mission is to provide compassionate, science-driven care for people facing ME/CFS, long COVID, and related postviral conditions—support that respects the complexity of these illnesses while offering clear, actionable steps. You deserve to work with someone who understands both the science and the lived experience.

Clinical Training and Academic Background

I bring together my personal experience and rigorous academic training to support people with complex, chronic illnesses:

  • Doctor of Chiropractic, Palmer College of Chiropractic, Florida

  • M.S. in Human Nutrition, University of Bridgeport

  • B.S. in Exercise Science, College of William & Mary

  • Postgraduate study in Nutrition and Biomedical Research at the Technical University of Munich

  • Visiting Scientist at Cornell’s Center for Enervating Neuroimmune Disease (Dr. Maureen Hanson’s lab)

  • Certificate in Medical Writing and Editing, UC San Diego

This unique combination of experience allows me to interpret complex research, connect it to practical interventions, and communicate it clearly for patients and clinicians alike.
